What is Continuous Authorization and how can we get it>?

We sell vegetables to customers over the phone and would like to know how we can set up a system that allows us to take the value of delivery off the customers card each week. But like direct debit as appose to standing order as the value would be different each week. Think it may be called the above but not sure and if it is how do i get it!!!
